“FIREHOUSE LASAGNA” Feeds 12

Ingredients:
• 2 boxes of lasagna noodles
• 1 chopped onion
• 1 garlic clove
• 5 lbs. ground beef
• olive oil
• (3) 28 oz. cans of tomato puree
• (1) 6 oz. can of tomato paste
• ½ cup of oregano leaves
• 1 cup of basil, chopped
• 2 tbsp. of sea salt
• ¾ tbsp. of pepper
• 4 lbs. of ricotta cheese
• 2 ½ cups of grated Parmesan cheese
• 2 extra large eggs
• ½ cup chopped parsley
• 3 lbs. of mozzarella cheese

Sauce:
1. Cover bottom of pot with olive oil
2. Heat oil, place chopped onion into pot
3. After 5 minutes place chopped garlic into pot
4. After 3 minutes place 3 cans of tomato puree into the pot
5. Add 1 can of tomato paste, oregano, basil, sea salt and pepper, 1 ½ cup grated Parmesan cheese
6. Cook for 60 – 90 minutes uncovered over medium-low heat

Directions for Lasagna:
1. Cook lasagna noodle
2. Cook chopped meat in pan and drain
3. While the sauce is simmering make the cheese filling in a large bowl. Add the Ricotta cheese, 1 cup of Parmesan cheese, eggs, parsley, sea salt and pepper
4. In a large tray (18” X 10” X 3”) once the sauce is done, cover the bottom of the tray with sauce
5. Place cooked lasagna noodles to cover the bottom of the tray
6. Cover the noodles with sauce, then place a layer of mix cheese over the noodles, then a layer of cooked chopped meat, and then a layer of mozzarella cheese
7. Repeat steps 5 & 6
8. Repeat steps 5 & 6 again
9. Top off with a layer of noodles and cover in sauce
10. Top noodles with mozzarella cheese and same chop meat
11. Cover, place in oven at 400 degrees for 90 minutes (take cover off the last 10 minutes)
12. Let sit for 10 minutes to settle, then serve
